Recipe from Travels: Avocado-Citrus Salad from Disney’s Royal Palace

One of my dear friends owns a blog called Disney Food Blog and I love reading her posts about Disney food. I have to admit, food is something Disney does well in their fine restaurants. Our whole family is going for the Disney Social Media Moms Conference in March and we did a lot of research on finding the best places to eat while on DisneyWorld. I truly enjoyed visiting Disney Dream last week, and wanted to post recipes from the trip. Stay tuned for more to come! This avocado-citrus salad is from Disney Dream’s Royal Palace restaurant, and it is one of the family restaurants everyone will dine during their cruise. How it works on Disney cruises, you will dine in a different restaurant every night, but you will have the same server the entire time making it feel like you are part of the family. The customer service is just amazing onboard. I actually never ate in the Royal Palace, since the christening cruise was only for two nights, but I took all of these pictures from there. I love how it is decorated inspired by Disney’s famous princess stories. I love the interior of the entire ship, and the Royal Palace is just one of the examples of not just fantastic food, but magical design bringing Disney stories alive.

Avocado-Citrus Salad / Royal Palace

Serves 4 Citrus Dressing 1/4 cup fresh orange juice 1/2 lime, juiced 2/3 cup olive oil 1/2 teaspoon coarse salt 1/4 teaspoon freshly ground black pepper Avocado-Citrus Salad 4 navel oranges 3 ripe Hass avocados, halved and pitted 6 cups mixed baby lettuce For the citrus dressing: Combine orange juice and lime juice in a medium bowl. Slowly drizzle in oil, salt and pepper, whisking vigorously until combined. If making in advance, re-whisk before serving. For the avocado-citrus salad: 1. Cut peel, including the white pith, from the oranges with a small knife. Cut segments free from membranes; set segments aside and discard membranes. 2. Cut avocadoes into 3/4-inch-thick slices. 3. Divide mixed greens among 4 salad bowls. Top with 5 avocado slices and 5 to 8 orange segments; drizzle lightly with dressing. Serve immediately.
